Françoise Fleuriet - Atelier de Conserverie
Philippe and Françoise Fleuriet have lived in the Charente for more than 25 years in a traditional Charentais home which they restored in the small town of Rouillac, in the heart of "Fins Bois," one of the six appellations of the Cognac region.
From the family home Françoise a chef by trade, began to live her passion for gardening and homemade "Conserves" by developing various recipes without the use any additives, preservatives or colouring from their harvest of old and traditional varieties of seasonal fruits and vegetables, picked at optimum ripeness to guarantee the full flavours.
But Françoise and Philippe wanted to go even further and in 2003 an idea began which was to create a Pineau Vinegar from Pineau des Charentes AOC, a traditional aperitif wine made by adding young Cognac to the unfermented juice of the grapes of the region. On 30 November, 2007 the idea came to fruition, Pineau Vinegar, aged 4 years in oak barrels, a delicate product, unfiltered, without additives, preservatives or coloring.... in short, a true natural product and naturally good which would become their flagship product celebrated by Chef’s and food critics alike.
And although today, with over 40 beautiful homemade recipes and a growing demand, the Conserverie Fleuriet proudly remains authentic, produced in the same kitchen and simmered the traditional way in small quantities just as they originally intended…
